Yogurt sponge cake - kids friendly

You need a big mixing bowl, a spoon and saved yogurt cup as measuring unit, and you have all the utensils for you first joint baking adventure!

Ingredients:

  • 1 - 2 eggs (your choice)
  • 1 cup of sugar
  • 1 cup of plain yogurt (approximately 150-180 g)
  • 1/2 - 1 cup of sunflower oil
  • 2 cups of flour
  • 1 tsp vanilla sugar
  • 1 tbsp baking powder
  • 2 cups of fresh, frozen, or canned fruit OR 1 cup of mini chocolate chips
  • 1/2 cup of chocolate/cocoa powder (optional)

Instructions:

  1. Preheat your oven to 360°F (180°C).
  2. Prepare a 9-inch round cake pan by lining it with parchment paper, buttering, or oiling it.
  3. In your large mixing bowl, combine the yogurt, eggs, sugar, vanilla, and oil. Gradually add the flour and baking powder, stirring lightly until just combined. If the batter is too runny, add some flour.
  4. Pour the batter into your prepared baking pan. If desired, sprinkle chocolate chips or fruit over the batter. Optionally, scoop half of the batter into the pan, add the chocolate chips or fruit, then mix the chocolate powder into the remaining batter and pour it over the first layer.
  5. Bake for 35-45 minutes or until the cake is golden and a toothpick or knife inserted into the center comes out clean.
  6. Allow the cake to cool on a wire rack. Dust with powdered sugar and serve with a dollop of creme fraîche or vanilla ice cream.
