Ambrosia fruit salad

Ingredients:

  • 2 dl cold heavy cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 2 dl sour cream
  • 4 cups mini marshmallows (optional)
  • 300 g drained mandarins in syrup
  • 500 g drained pineapple chunks in syrup
  • 500 g pitted and drained cherries
  • 100 g fresh berries for topping
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions:

  1. Whip the cream: In a large bowl using a hand mixer, whip the heavy cream, sugar, and vanilla extract on high speed. Be careful not to over-whip.

  2. Add sour cream: Gently fold in the sour cream with a spatula until well incorporated into the whipped cream.

  3. Layer fruits and marshmallows: Add mini marshmallows, mandarins, pineapple chunks, cherries, and shredded coconut to the bowl. Gently fold everything together to ensure even distribution without crushing the fruit. Sprinkle extra coconut on top and add fresh berries and nuts if using.

  4. Chill: Cover the bowl with plastic wrap or a lid and refrigerate the ambrosia salad for at least an hour. Ambrosia salad is best served chilled to allow the flavors to meld together.

  5. Serve in a beautiful bowl with a ladle or serving spoon. Alternatively, you can prepare individual servings in dessert cups.

Tips:

Fruit variations: Customize the fruit based on availability and personal preferences. Fresh grapes, diced apples, or other berries can also be wonderful additions to ambrosia salad.
Lighten it up: For a lighter version, you can substitute heavy cream and sour cream with plant-based cream and low-fat or fat-free Greek yogurt.
Let it sit: Ambrosia salad often tastes better after chilling and allowing the flavors to meld. Even better if prepared a day ahead.
