Ingridients:
- 2 eggs
- 150 g of icing sugar
- 150 g of softened butter
- 150 g of soft honey (if it crystallizes, warm it up a bit)
- 1/2 teaspoon of gingerbread spices
- 450 g of white flour
- 50 g of rye flour
- 3/4 teaspoon of baking soda
Process:
- Beat eggs and sugar. Add all the remaining ingredients and make a soft dough. Cover the kneaded lump of dough or wrap it in foil and let it rest in the fridge for an hour or more.
- Take spoons of cold dough and form little balls (2-3 cm in diameter) with your hands. Place the balls on a baking tray lined with baking paper about 5 cm apart, as they will spread out a bit during baking. You can press halves of walnuts, pecans, whole almonds or other types of sweet decorations into the balls and flatten them a bit.
- Push the formed cookies into the oven preheated to 180 degrees and bake them for 10-11 minutes. When they come out of the oven, they are still a little soft, but they harden just right during cooling.
- Baked biscuits store in a container with a lid.
Soft gingerbread honey cookies are very easy to make and do not need to "stand" for a few days. Due to the addition of rye flour, they are more authentic and full of flavor. Happy holidays!
