Date, coconut and oatmeal Cookies - recipe

The preparation is quick and straightforward. The measurement unit is 200 ml cup.

Ingredients:

  • 1 cup of flour
  • 1 cup of rolled oats 
  • 1 cup of shredded coconut or coconut flakes
  • 1 cup of chopped dates
  • 3/4 cup of sugar 
  • 1 teaspoon of ground ginger 
  • 1 teaspoon of cinnamon 
  • 1/2 teaspoon of ground cloves 
  • 125 g of butter 
  • 2 tablespoons of water 

Instructions:

  1. Start by chopping the dates and coconut shreds into smaller pieces and place them in a larger bowl. 
  2. Add the flour, rolled oats, sugar, ground ginger, cinnamon, and ground cloves. Mix well until the ingredients are evenly combined. 
  3. Add the softened butter and 2 tablespoons of water to the bowl. Use your hands to knead everything together until you get a compact dough that holds together nicely. 
  4. Form small balls from the dough and place them on a baking tray. I dont't even use parchment paper, because they go off easily when baked. Gently flatten the balls with your palms to create the shape of cookies. 
  5. Preheat the oven to 180°C (350°F) and bake the cookies for about 12-15 minutes. Baked cookies are whitish colour, so dont't let that fool you. They are done. Remove them from the oven and allow them to cool before serving. 

When cool these dates and coconut cookies are crunchy and wonderful, perfect for enjoying with an afternoon tea or as a dessert whenever you crave something sweet. I'm confident these cookies will soon become favorites among your family members and friends. Enjoy making and indulging in them!
