Yogurt sponge cake (kids-helping-friendly)

You need a big mixing bowl, a spoon and saved yogurt cup as measuring unit, and you have all the utensils for you first joint baking adventure!

  • 1 cup of sugar
  • 1 cup of plain yogurt (150-180 g, 1/2 - 1 cup of sunflower oil
  • 2 cups of flou, 1 tsp vanilla suga, 1 tbsp baking powde, 2 cups of fresh, frozen or canned fruit or 1 cup of mini chocolate chip, 1/2 cup of chocolate / cocoa powder (optional.

Instructions

Preheat the oven to 360 F (180C).

Coat a 9 inch round cake pan with baking sheet, butter or oil.

In a large mixing bowl combine the yogurt, eggs, sugar, vanilla, and oil. Add flour and baking powder and lightly stir until just combined.

Pour the batter into your baking pan, sprinkle with chocolate chips or fruit. Optional: Scoop half the batter into your baking pan, sprinkle with chocolate chips or fruit, then mix chocolate powder to remaining batter and pour over first layer.

Bake for 35-45 minutes until golden or when a knife or toothpick inserted is pulled out clean.

Cool on a rack. Dust with powdered sugar and serve with the scoop of Creme fraiche or vanilla ice.
